The process of thermal sterilization in food production is usually expressed by a mathematical formula, which we call a sterilization formula. It is typically represented as follows:
It means: heating up for 15 minutes, holding at temperature for 35 minutes, cooling down for 20 minutes, and sterilization temperature of 121°C.
This kind of representation isn't very scientific—for example, the heating time of 15 minutes can vary, possibly taking 17 minutes or even just 14 minutes. It's difficult to precisely reach 121°C exactly in 15 minutes unless using the most advanced control method: linear control.
